This is one of my favorite cocktails at the moment. It’s refreshing, it’s interactive, and it’s gorgeous.

This drink is slightly more involved than most. It requires one to make ice cubes. These cubes were made out of hibiscus tea. 37 grams of hibiscus for 12 cups of water. Bring to a boil, cool, pour into ice cube molds.
It also requires roasted cashew orgeat. I took about a pound of cashews and toasted them in the oven. While they were still hot I dropped them in a pot with 25 oz of sugar and 30 oz of water and brought it all to a boil. Once it reached a boil I turned off the heat and let it sit for an hour then strained it.
2 oz Gin
3/4 oz Roasted Cashew Orgeat
3/4 oz Fresh Lemon Juice
1/4 oz Absinthe
1 dash Bitter Truth Lemon Bitters
When I serve this drink I stir it and pour it into a carafe or some other type of glass. I give the patron the glass with ice and mint and the carafe with the cocktail and allow them to pour it themselves. It makes it interactive and allows them to watch the color change from clear to red, hence the name “The Leach”.

Right now my favorite brand is Mythe Absinthe which is what I used in this drink. I think its around 138 proof. It’s really delicious and has some serious kick.
